1Preparation: Start by peeling the potatoes and cutting them into small, uniform cubes. Dicing them small is my favorite trick—it ensures they cook much faster, saving you precious minutes. Finely dice your onion.
Sautéing the Base: In a large pot, heat yourbutter or olive oil. Add the onions and sauté until translucent. Add thepotato cubes and let them sweat for 2–3 minutes; this unlocks their naturalstarch, which will later help thicken the soup beautifully.
Simmering: Pour in the vegetable broth, cover, and let it simmer for about 15–20 minutes. You’ll know it’s ready whenthe potatoes are fork-tender and beginning to yield.
The Magic Touch: While the soup is simmering, wash your wild garlicthoroughly. Coarsely chop the leaves. Just before blending, toss the wildgarlic into the pot. You only need to cook it for about 1 minute—this preservesits vibrant green color and intense, fresh flavor.
Blending: Using an immersion blender, mix the soup until it reaches a perfectly smooth, bright green consistency.Finishing:Stir in your splash of cream or coconut milk if you want that extra richness.Taste the soup and season with salt, pepper, and a touch of nutmeg. The nutmegprovides a warming contrast to the fresh, garlicky notes.
