Prepare the Eggplants
Preheat your oven to 200°C / 400°F.Wash the eggplants, pat them dry, and cut them in half lengthwise. Using a spoon, carefully scoop out some of the flesh from the center of each half, leaving about 1 cm of flesh around the edges so the eggplant keeps its shape.Finely chop the eggplant flesh you removed and set it aside..Pre-Roast the Eggplant
Place the eggplant halves on a baking sheet or in a roasting dish.Brush the insides with about 1 tablespoon of olive oil and season with a little salt and pepper.Roast for 10–15 minutes, just until the eggplant begins to soften. This extra step helps create an especially tender, buttery texture.Prepare the Mediterranean Filling
While the eggplant is roasting, heat another tablespoon of olive oil in a pan over medium heat.Add the chopped eggplant flesh and minced garlic. Cook for about 3–4 minutes, stirring occasionally, until the eggplant starts to soften.Remove from the heat and transfer to a bowl.Add the chopped Kalamata olives, fresh basil, mozzarella, dried oregano, smoked paprika, lemon juice, and the remaining olive oil. Season with salt and freshly ground black pepper.Give everything a good mix until the ingredients are evenly combined.Fill the Eggplant Boats
Remove the pre-roasted eggplant halves from the oven.Spoon the filling generously into each eggplant boat, gently pressing it down so the filling stays in place.Divide the mixture evenly between the four halves.Bake Until Golden and Tender
Return the stuffed eggplants to the oven and bake for another 20–25 minutes, or until the eggplant is completely tender and the mozzarella is melted and lightly golden on top.If you want an extra golden finish, switch on the grill/broiler for the final 1–2 minutes. Keep a close eye on them so the cheese does not burn.Garnish and Serve
Let the stuffed eggplants rest for a minute or two before serving.Finish with fresh basil, a drizzle of olive oil, and, if you like a little heat, a sprinkle of chili flakes.Serve warm and enjoy!
